On Tuesday I had the absolute pleasure of attending a Pakistani cooking class. These are the two dishes we learned to make. Both are delicious! If you are in the Geneva area and would like to attend a class, contact me and I’ll give you the details.

Chicken Do Piyaza
ingredients: 1 whole chicken skin off and cut into 12 pieces, 1 cup of yogurt, 1/2 cup of cooking oil, 4 medium onions peeled and thinly sliced, 1 garlic pod peeled and sliced, a 2 inch piece of ginger peeled and julienned, salt to taste.
Eggplant Subzi
ingredients: 3 medium eggplants, 1/2 cup of oil, 2 pureed tomatoes, 1 tblsp each of ginger and garlic paste, 1/2 tsp each of kalonji or whole cumin seeds, 1 tsp of fennel seeds, 1/4 tsp of turmeric powder, 1/2 tsp chili powder or cayenne pepper, salt to taste.

Time to get back to some photography.
One of my goals this year is to master small flash photography, so until it drives me insane, that is the lighting I’ll be using.

This shot is tighter and a fair bit lighter. On my laptop the image above is quite dark, but on my desktop it’s lovely.
Time for a monitor calibration!

Dough:
4 cups of white flour
2 tablespoons of butter
1/4 cup of sugar
1 teaspoon of salt
2 teaspoons of dry yeast
1 teaspoon of vanilla
1 egg
1 and 1/8 cups of milk
Add all of the above ingredients in the order
recommended by your bread machine and run it on the basic setting.
Coatings
While the machine is mixing the dough, prepare the coatings.
Melt 1/2 cup of butter in a small bowl and set it aside.
In a second small bowl mix the following:
1/2 cup of packed light brown sugar
1/2 cup of white sugar
2 tablespoons of white flour
2 of ground cinnamon
After the dough is finished mixing, remove it, turn the machine off and preheat the oven to 350 degrees F (or 180 C). Roll 1 inch balls of dough through the melted butter first and then through the dry mixture. Place the coated balls in a greased pan (I use either one large bundt pan or six little ones) and then cover lightly with a tea towel for about an hour. The dough will rise to roughly double it’s size. Finally place the pans in the preheated oven for 20 minutes or until golden brown.
Glaze
If you want your monkey bread to be really naughty/lovely, make this white glaze for it.
1 cup of icing (powdered) sugar
2 teaspoons of melted butter
1 to 2 tablespoons of milk
1/2 teaspoon vanilla
Combine all ingredients to make a thin glaze and drizzle it over warm monkey bread.
